Kadai Chicken Recipe

A beautiful combination of strong flavors and spices is what makes this red curry dish so tempting. It is fairly simple to cook. Delicious juicy pieces of chicken with capsicums that are prepared in gravy that is creamy and spicy. The fenugreek seeds add that touch of slight bitterness to the dish, the lovely color of capsicum adds a dash of zing and color to the dish, the cream adds flavor and at the same time cuts the intensity of the spice. Try this one out; I am sure that kadai chicken is one dish that will make you popular with your family and social circle. It is irresistible, mouth-watering and extremely simple to cook.

KADHAI CHICKEN

Kadai chicken, as the name suggests is cooked in a kadai, but for many of us that option seems to be slightly unhealthy. For all of you out there that do not prefer to use a lot of oil in your food, you could switch the kadai for the oven or microwave. I prefer to cook in the microwave. It takes less time, its healthy; it is a lot less messy.

Kadai chicken will more or less go with any Indian bread. What you can do is, to add a zest of tradition, try out with a laccha parantha or a chapatti, rice or even a naan.

 Preparation time: 15 minutes

Cooking time: 10-12 minutes

 Ingredients:

  • 500 grams of chicken breast. Chop it into pieces.
  • One (1) tablespoon salt or to taste
  • Three (3) tablespoons of oil
  • Half (1/2) tablespoon of fenugreek (methi) seeds
  • Two (2) large onions, chop in slices
  • About 12 chopped flakes of garlic
  • One (1) chopped tomato
  • Half (1/2) a cup of tomato puree
  • Half (1/2) cup chopped green coriander
  • One (1) capsicum cut into thin slices
  • One (1) tablespoon of crushed ginger paste
  • Three (3) tablespoons of cream
  • Make a fine Paste ( one tablespoon of coriander/sabot Dhania seeds and two dry red chilies)

 Method:

  • Mix the oil, fenugreek (methi) seeds, garlic, chopped onion slices, freshly ground coriander and red chili paste, chicken pieces and salt to taste in a large microwave dish.
  • Place the bowl in the Microwave (uncovered) for about 8 minutes.
  • Give it standing time for about 2-3 minutes.
  • Next, add the chopped tomato along with the tomato puree, green coriander, ginger and capsicum. Mix all ingredients well.
  • Place the bowl in the Microwave (covered) for about 5 minutes.
  • Allow standing time for about 2-3 minutes.
  • Lastly, add some cream/malai. This will add thickness and texture to the dish.
  • Mix well and serve hot!
